Set your alarms. A new menu is landing at The Fat Duck. 

On Friday 24th June at 12pm (midday) we will be releasing the first tables for Volume 5 of our Anthology Menu. Tables will be available for August 31st up to the end of September. 

But don’t worry, if you still haven’t tried volume 4 then a small number of tickets are still available through the same link for dates preceding this. 

We look forward to welcoming you to this next great instalment.

Question Everything. Two words that sum up the approach to food in The Fat Duck. They are so important that Heston put them beneath his very own coat of arms. But not just question everything but question every…thing.  This means that we look closer and closer at things, zoom in if you like, but never losing that wider sense of curiosity that takes in everything around us or inside us. Our senses, feelings and memories guide us to answers we never expected. 

Heston and the team are endlessly searching for ways to give people experiences that will endure long in their memories.  The anthology series has allowed us to look again at some of the culinary milestones in the restaurant's life however we also have one eye on the future.  Where will we focus next? What experiences can we create? 

We cant wait to share them with you when they’re ready.

‘Bray and Windsor are a stone's throw away. However, the journey from chopping onions in my kitchen to meeting Her Majesty The Queen has been something that I never expected. An unforgettable experience that has a special place in my heart. It has been a real privilege to have met her and her family quite a few times and to have cooked for them also. 

Through all my research into historical British cooking and the royal families of the past I have never come across a monarch who has achieved what she has. 

This country has grown away from the Victorian values of the 19th century and moved into a vibrant multicultural nation where we celebrate much more the beauty of human imagination and creativity. 

This is an incredible milestone for the Queen and quite a moment for the whole country, and I am so happy to be able to play a small part in the celebrations on Sunday.

Our oyster with passionfruit jelly and lavender course on Volume 4 of the Fat Duck’s Anthology Menu is a delicate balancing act of sweetness. The key to its execution is the ripeness of the passion fruit juice. Under ripe has too little sugar, which leads to the oyster’s flavour over-dominating. Over ripe gives too much sweetness and the dish becomes too dessert-like.

But how do you get it just as you want it? The solution lies in the use of a nifty gadget called a refractometer. It helped Heston balance the sugar content by measuring the ratio of the mass of sugar to the mass of water in the dish. This is just one of many ways in which Heston revolutionised the world of food through the appliance of science and it helped him create this homage to the humble oyster. #TheFatDuck #Heston #3MichelinStars
